The Cookbook Challenge 2011

I have to HAVE TO start using some of my cookbooks, so the Cookbook Challenge is totally for me, and a good excuse to wear my new apron!

Hot new apron

26 recipes in 52 weeks, here I come! To kick things off:

Fruit Compote with Cinnamon Crumpet Fingers
from Green: Vegetarian Food

Cookbook Challenge Fruit Compote

For the fruit compote:
200g pitted prunes
200g fresh dates (yum!!) (remove the seeds)
400g dried fruit salad mix
500mL apple juice (I used about 700mL)

Cool apron

Put the prunes, dates and dried fruits in a saucepan with the apple juice. Bring to the boil, then reduce heat and simmer for 15 minutes or until the fruit is tender.

Cookbook Challenge Fruit Compote

Serve topped with yoghurt, and with crumpets with cinnamon sugar. Yums! (Or at least I would have, if Woolworths HAD crumpets today. Where did they go? *confuzzled* Oh well, cinnamon toast for breakfast on my first day back at work?)

            Haha! With that single comment, you’ve changed my mind. I do have a vitamix-using recipe, and I think I’ll make that. After all, dates are stone fruits! :P

    That cookbook challenge is a great idea! I could probably stand to take it myself, considering how many I’ve accumulated just this past year…

    Anyhow, that compote looks so warm and comforting, I sure wish there were decent stone fruits available around here now!

      It woudn’t hurt to try! Mine were all dried fruits because I came to the compote recipe and went that’s IT!
