I have to HAVE TO start using some of my cookbooks, so the Cookbook Challenge is totally for me, and a good excuse to wear my new apron!
26 recipes in 52 weeks, here I come! To kick things off:
Fruit Compote with Cinnamon Crumpet Fingers
from Green: Vegetarian Food
For the fruit compote:
200g pitted prunes
200g fresh dates (yum!!) (remove the seeds)
400g dried fruit salad mix
500mL apple juice (I used about 700mL)
Put the prunes, dates and dried fruits in a saucepan with the apple juice. Bring to the boil, then reduce heat and simmer for 15 minutes or until the fruit is tender.
Serve topped with yoghurt, and with crumpets with cinnamon sugar. Yums! (Or at least I would have, if Woolworths HAD crumpets today. Where did they go? *confuzzled* Oh well, cinnamon toast for breakfast on my first day back at work?)
