Marinating pork…. what do you use?

pork scotch fillets

Picked up some free range pork scotch fillets at Woolies, and wondered what to marinate them in. I ended up deciding on a garlic, ginger, sweet chili and soy sauce mix. It turned out wonderfully with the roast veg and a bed of baby spinach.

Hey Fiona! For marinade (well, for steak, at least), I use a 1/4 cup olive oil, 1/4 cup red wine vinegar, 3 T Worchestershire sauce, 1 T salt, 1 t thyme. I love Worchestershire sauce on pork. Sweet chili and ginger sounds yum! I’m going to try that soon!

Those are some excellent ideas for pork tenderloin. I have some in the fridge ready to marinate right now!
